Ingredients
  1. 6” long filet of Salmon, skin still intact (preferably fresh caught Chinook or Coho)
  2. SECRET INGREDIENT – 2 tsp CattleBoyZ Gourmet BBQ Seasonings and savoury barbecue rub
  3. 1 tbsp Lemon Juice
  4. ½ cup Tzatziki (preferably homemade)
Instructions
  1. Place salmon into a piece of tinfoil
  2. Create an edge about 1” high around the outside perimeter
  3. Cover with lemon juice
  4. Sprinkle the Gourmet seasoning over the fish, then add the Tzatziki on top of that
  5. Place on to a medium heat bbq grill until the flesh starts to flake - use a fork to check this
  6. Depending on the thickness, it should take between 9 – 15 minutes
  7. Be sure not to overcook as it will dry out and turn into a tough piece of meat
  8. Serve with rice and fresh garden vegetables
Notes
  1. Tastes great after a day of fishing!
  2. For added flavour, be sure to serve this dish with any of CattleBoyZ award winning gluten free bbq sauces.
